Cita's Southwest Chicken Chili

  Make this on a weekend while you’re doing stuff around the house and have an easy dinner during the week of soup and grilled cheese or soup and a salad. Makes a great addition to the Super Bowl menu! Luca’s Famous Chicken Enchilada Casserole

You’ll need: One jar of Cita’s Garden Green Salsa 1 can (14.5 oz) of fat free chicken broth 1 block of reduced fat cream cheese 2 ½ cups of shredded chicken (rotisserie, canned, or oven roasted…it’s all good) 2 ½ cups of grated mozzarella and cheddar mix 18 corn tortillas (torn into quarters – make 3 piles of 6 shredded tortillas) Mixing bowl 9x13 inch baking dish Prep:In a bowl or saucepan, mix Garden Green salsa and a can of chicken broth. Cita’s “30 Minutes to Fiesta” meal

For chicken you’ll need:  ½ jar of Cita’s Garden Green salsa  1 lb of boneless, skinless chicken breasts, cut into cubes Medium size skillet with lid  Super easy!  Place chicken and salsa in skillet.  Add lid, cook on medium heat for 25 minutes, stirring occasionally.  For rice you’ll need:  ½ jar of Cita’s Red Rage Salsa  1 1/2 cups of water  1 cup of your favorite rice (we use jasmine)  Medium size saucepan/skillet with lid Mix ½ jar of salsa with 1 1/2 cups of water.  Add salsa mix and rice to saucepan and cook on HIGH heat until reaches a gentle boil.  Reduce heat to low.  Add lid and cook for about 20 minutes or until liquid is absorbed....

Lemon Pepper Chicken with Red Rage Sauce

  You can add a can of black beans (drained), corn or your favorite veggie for a 1-skillet meal. Pair with steamed rice or roasted potatoes for a hearty meal.   You’ll need: 4 chicken breasts, medium thickness Lemon pepper seasoning Pam or other non-stick cooking spray ½ yellow or white onion, sliced ½ jar of Cita’s Red Rage Salsa 10-in pan   Lightly and evenly season both sides of chicken breasts with lemon pepper seasoning. Set aside. Heat your pan on the stove. Lightly coat with a bit of cooking spray. Cook chicken breasts on medium heat for 5-7 minutes per side to allow browning. Mango Pina Pizza

  Perfect quick dinner! Mozzarella cheese, bacon and Mango-Pina Salsa! . Bake or grill for about 8 minutes ENJOY!     You’ll need:½ pound of thick sliced bacon ½ jar of Cita’s Salsa – Mango-Pina 1 cup of shredded mozzarella cheese 1 store bought thin pizza crust or make your own 10 grape tomatoes, sliced in half Chop bacon into bite size pieces and fry until crisp. Drain on a paper towel and set aside. Pour 8 oz. (half the jar) of Mango-Pina on the pizza crust and spread out evenly. Top with mozzarella cheese, bacon and sliced tomatoes. Bake or grill for about 8 minutes or until bottom is brown and crisp. ENJOY!
