Rustic Ranchero Meatloaf

I made meatloaf twice in my life before I came up with this recipe and now we have it at least once a month from October - February. My boys (8 and 14) love it!  They see a pack of ground turkey and they want meatloaf first (with taco salad at a close second).  I love it because I can throw all the stuff together without chopping anything and then let it cook while I do other stuff. Cita's Southwest Chicken Chili

  Make this on a weekend while you’re doing stuff around the house and have an easy dinner during the week of soup and grilled cheese or soup and a salad. Makes a great addition to the Super Bowl menu! Luca’s Famous Chicken Enchilada Casserole

You’ll need: One jar of Cita’s Garden Green Salsa 1 can (14.5 oz) of fat free chicken broth 1 block of reduced fat cream cheese 2 ½ cups of shredded chicken (rotisserie, canned, or oven roasted…it’s all good) 2 ½ cups of grated mozzarella and cheddar mix 18 corn tortillas (torn into quarters – make 3 piles of 6 shredded tortillas) Mixing bowl 9x13 inch baking dish Prep:In a bowl or saucepan, mix Garden Green salsa and a can of chicken broth. Cut cream cheese block in half lengthwise, then cut across the short side and make ¼ inch squares.  Divide into 2 stacks of about 8. Cita’s “30 Minutes to Fiesta” meal

For chicken you’ll need:  ½ jar of Cita’s Garden Green salsa  1 lb of boneless, skinless chicken breasts, cut into cubes Medium size skillet with lid  Super easy!  Place chicken and salsa in skillet.  Add lid, cook on medium heat for 25 minutes, stirring occasionally.  For rice you’ll need:  ½ jar of Cita’s Red Rage Salsa  1 1/2 cups of water  1 cup of your favorite rice (we use jasmine)  Medium size saucepan/skillet with lid Mix ½ jar of salsa with 1 1/2 cups of water.  Add salsa mix and rice to saucepan and cook on HIGH heat until reaches a gentle boil.  Reduce heat to low.  Add lid and cook for about 20 minutes or until liquid is absorbed....
