Cita's Southwest Chicken Chili


 

Make this on a weekend while you’re doing stuff around the house and have an easy dinner during the week of soup and grilled cheese or soup and a salad. Makes a great addition to the Super Bowl menu!

You’ll need:

One jar of Cita’s Red Rage Salsa

1 can (14.5 oz) diced tomatoes, undrained

1 can (14.5 oz) of fat free chicken broth

1 cup of Quaker medium barley

3 cups of water

1 tablespoon of chili powder

1 teaspoon of cumin

1 (15 oz) can of black beans, rinsed and drained

2 cups of frozen kernel corn

3 cups of cooked chicken breast, cut into bite sized pieces

Green onions, chopped (optional In a 6 qt saucepan, combine first seven ingredients (in bold above). Over high heat, bring to a boil; cover and reduce heat to low. Simmer for 40 minutes stirring occasionally. Add beans, corn, and chicken. Increase heat to high until chili comes to a boil. Cover and reduce heat to low. Simmer for 10 more minutes or until barley in tender. Sprinkle with chopped green onions. Enjoy!
